Why a commissary
It isn’t optional — it’s how you get permitted.
In both of our markets, a mobile food business can’t get a health permit without a
commissary agreement. In Utah that’s state rule
Utah Admin. Code R392-102, which also bars storing food or equipment at a home,
storage unit or garage. In Clark County it’s SNHD §10-702.11, plus daily
servicing under §10-501.11.
PCS is that commissary — permitted, inspection-ready, and the base your business is legally built on.
