Do I legally need a commissary?
Yes — Clark County won’t issue a mobile-food health permit without a commissary agreement (SNHD §10-702.11). PCS provides it.
What does daily servicing mean?
SNHD requires mobile units to report to their commissary daily for cleaning, sanitizing, and servicing (§10-501.11). We’re built for that turnaround.
I’m a caterer or sidewalk vendor, not a truck — can I use PCS?
Yes. Caterers, packaged-food makers, and street vendors all need a permitted kitchen base.
How is this different from other commissaries?
